The Best Part of A June Wedding.

I went to a wedding on Saturday. I didn’t know the bride or the groom–I went with my friend Shannon to help set up and serve the wedding cake. The bride looked gorgeous, the flower girl dresses were adorable, and the venue was totally hip. But the best part?

Dinner.

Chicken, asparagus, and potatoes. But not just any potatoes. They were green potatoes.

Or more clearly, broccoli and red potatoes. Mashed.

I had never even heard of or thought of taking two of my most favorite vegetables and making them in my most favorite way. Mashed potatoes are quite seriously my go-to comfort food. And I make it relatively healthy by minimizing butter, using skim milk, and always leaving the skin on. But adding broccoli?! Well that makes it that much better.

So I tried it last night. Boiled some red potatoes and broccoli until they were “mashable,” added some milk, a little bit of butter, and because I was feeling fancy, some Parmesan cheese. And they turned out okay. The problem? Not enough broccoli. So I know for next time.

(I’ve also heard that cauliflower works with this, and doesn’t end up looking like Dr. Seuss food.)

  1. Mmmmm. Going to try that! I've done mashed cauliflower before and quite enjoyed it. However, it is not uncommon to see cauliflower with a price tag of $5-7 per bunch over here. If I'm going to spend $5-7 on a vegetable, it better be dipped in gold.
