My New Favorite Cookie

Taken from Light and Tasty 2003 Annual Recipe Book. Seriously, my new favorite cookie. Although fair warning: if you are a cookie purist and don’t like a lot of “stuff” in your cookies, this is not for you.

2 eggs
1 c. packed brown sugar
1/3 c. fat-free milk
1/3 c. canola oil
In a large mixing bowl, beat these four ingredients.

In a smaller bowl, combine:
2 c. flour
1 t. baking powder
1/2 t. salt
1/2 t. cinnamon
1/4 t. baking soda
1/4 t. ground nutmeg
Add this to large mixing bowl of wet ingredients and mix well.

Stir in:
1 c. semisweet chocolate chips
1 c. quick cooking oats
1 c. grated carrots
1 c. raisins

Drop by heaping teaspoonfuls on cookie sheets sprayed with nonstick cooking spray. Bake at 350 for 10-13 minutes.

Result? A cookie that resembles carrot cake but is far healthier. Next time I make them, I plan to add 1/4 t. of allspice to give it a little more “oomph.”

  2. Kirsty is funny. Hey – I’m going to try these today after I go to the store and get carrots. Funny – that is the only ingredient I do not have. Anyway – are you teaching GD again? I thought you were in YW. The link on your site “What I’m teaching in church” has me confused. And hey – how did I never know about that cool Art Cinema place when we lived in Omaha. I want to move back to Omaha. I like Omaha. Wish I was close enough to suggest a cookie delivery. 🙂

  3. Kirsty–I figured you had enough sweets in your house after Aaron’s bday! Far be it from me to enable the eating of junk food. Plus you are coming over today and can have some then.Deb–yeah, they released me from YW in December. I can’t believe I didn’t tell you that. It was a pretty traumatic day. So Gospel Doctrine it is. Old habits die hard, I guess…the cinema just opened about a year and a half ago. Come back to Omaha!!!! 🙂

  4. i must try them! i love cookies! i love carrot cake! i have these ingredients!for unhealthy cookies you should try the cookie recipe i posted about a month ago – i still have a couple in the freezer – i’m happy just knowing i can have one when i need it! cookie happiness!

  5. This was indeed a wonderful cookie. Both bags of them in fact. (Oh c’mon did you really think I would share?) This cookie is also very good training food as I ran 10K the next day on pretty much nothing but the 2 bags of these cookies and it was an awesome run. Awesome I say! I could easily have run 10 more had I been furnished with 2 more bags of these cookies. Thus I feel that I can endorse this cookie (or 2 bags of them at a time) as an excellent fitness supplement.SignedBest. Trainer. Ever

  6. ah ha! plewe and i just made these! they are delicious. i agree they wouldn’t hurt from a bit more spice. thanks for the yummy conference weekend treat. plewe says she’s going back for a third and they are making her full and fulfilled. her words.
